@papercut: Use slams. They don't count toward striking and they do a lot of damage.
@papercut: I picked a wrestler and did big slams for 1 1/2 rounds until each slam would rock my opponent and got the submission easily.
Fight someone with bad sub defense. I got it against Brock Lesnar in career mode. My dude had 100 strength, but only 60 sub offense.
It helps to get the takedown, transition to mount, and hold position for awhile while they tire themselves out trying to escape.
Doesn't hurt to set up a fight against Lesnar with either Nogueira or Mir,preferrably Minotauro because of the slams to go with the Jiujitsu.Work slams,transition for a choke,and just chip away.You can still submit him without the slams just going for submissions endlessly,but that'll run well into the third round,so you might be taking a chance at a lucky strike dropping you.All in all,not as difficult as you'd imagine.
@all - slams worked great. Slam him until he has red stamina. Make sure you fight Brock Lesnar in heavy weight, very low submission. Don't forget the achievement only calls for you to do this TO a UFC fighter, you can create a 100 takedown, 100sub, 100str fighter and use him.
