Today I played Bayonetta and lasted got about 3 hours in before realising that normal difficulty was going to be too hard for me. So that I can complete it without smashing the controller I have changed the difficulty down to Easy which is so easy I barely have to concentrate to get through the levels. :-(

Yeah. It's a wide gap between easy and medium in that game. I had some tough times, but I was dead set on playing the game through medium. It goes a little easier when you stop worrying about getting good scores and decent trophies.

There is a checkpoint after just about every single fight.  Play on normal, die a lot, and use lollipops for the stuff you just CAN'T make it through.  Gracious and Glorious should be your main real trouble spots in a normal playthough.  Just use a large yellow lollipop for them.  The only way you get better at this game is from playing it on Normal.  As you suggest, Easy is a joke, and it takes the fun out of everything.  Also, buy the "HOT" items that are suggested to you.  One activates witch time whenever you're hit, which is a huge benefit.

I learning to activate witch time is the key in that game. Don't focus too much on attacking but more on how to not get hit. This game uses the old motto, "The best offense is the best defense"

I'll give normal another shot, I got a bit annoyed when facing the double headed dragon thing in the church up until that point I was finding the difficulty was fine then that thing attacked and it quickly felt like I was playing ninja gaiden again.

I admit, I got a serious Ninja Gaiden vibe from the whole game in terms of feel game play wise, so hopefully that doesn't discourage you. There's enough crazy stuff going on this in game that it's a "you have to play it for yourself" situation.
