Your favorite Boss fight of this generation.
Bayonetta's final battle with Jeanne on Isla del Sol. Mirror Match style fighting on rooftops, skyscrapers, multiple missiles in flight, and some of the best boss battle music ever? Very yes.
Edit: Also, the whole thing takes place while the city is being destroyed by said missiles. So great.
Kael'Thas in World of Warcraft. In a non-MMO, probably the final Darksiders boss. It made you feel like a total badass and I just loved the fight. Or almost any Demon's Souls boss.
I would have to vote for the nonplayble Andrew Ryan boss fight in Bioshock... but that doesn't count.

I thought the boss in Twilight Princess where you had to ride the spinning top up the tower was really creative, and fun too. Then there's Akantor from Monster Hunter; that big, plant-like alien thing from Dead Space; and that huge tank in Valkyria Chronicles.
Pretty tough category.
I guess I had a lot of fun/frustration with the Devil May Cry 4 bosses. The Credo fight was pretty good, in particular. Prince of Persia had some cool things going on during bosses, too. Though some of the most satisfying victories were in John Woo's Strangehold, because damn that game could get tough. And the first time we fought the Berserker in Gear of War 1 was friggin' amazing.
XBLA games have a ton of great bosses, I can't narrow it down to just one.
" MGS4 was pretty baller. "Yeah this. It wasn't challenging or particularly original (I mean it's just a brutal martial arts fight), but it was a very satisfying wrap up to the series. I loved that it went through all the different styles of health bar and music. That stuff blew me away.

That one boss in monster hunter Tri that you fight in the desert on that ship was fairly interesting.
The Spider Queen of Brütal Legend. The fight itself was kind of rinse and repeat, but the fight is insanely atmospheric due to the background music.
MGS4 had a pretty cool final boss fight, as well. I get to watch two nursing home worthy men fist fight to the death? Win!

Stallord (the boss of Arbiter's Grounds) from The Legend of Zelda: Twilight Princess. Not only the best Zelda boss of all time (Goht from MM is in second), Stallord actually made the spinner (which was completely useless outside of that dungeon) a lot of fun.

Just about all the boss fights in Twilight Princess. The best pack of bosses in the entire Zelda series were in that one. Dragons, (humongous) sea serpents, giant skeletons, and a few standouts (the dragon and the skeleton) use the dungeon items in really fun and cool ways.
I also dug the final boss in Darksiders. Fun way to end the game, though I feel that the last form could have used some work to make it tougher or maybe another form after that.
Even though you fight them three goddamn times, the DMC4 crew of bosses were pretty great, especially with Nero. Felt kind of like Shadow of The Colossus when I was trying to figure out how to stun them to get them into a position to use the Devil Bringer in a throw.
