The Dog doesn't die - Your character dies and you have to look at your dying character through the eyes of the dog, but the colour vision is all fucked up you can only see blues and yellows, because that's how dogs see. In the next game, CoD: Spectres, YOU ARE THE DOG ALL THE TIME.

maybe the dog is like Brain from Inspector Gadget and is always helping you the entire time your not looking.

The last level takes place in a chocolate factory. At one point the player character is encased in a chocolate shell. And, oh fucking shit, the dog has to eat him free. It's a really fucking dark moment as you break free and the dog has a seizure and dies.
