I believe they've since stated that it was included just for kicks (and as a hint to a new game coming out, since the text was bolded like it is when it's something important.)
Not Vincent though, just a look-a-like.

Yep. And if you look carefully at the Persona 3 look-a-like, he has a mole beneath one of his eyes that the Catherine Vincent lacks.
