    Is that even possible? I know that Zevran is easy to romance, and since Leliana is bisexual I'm thinking maybe I can get the romance achievement for her. Will I also be able to get the romance achievement for Alistair? Is it possible to do all three in one playthrough?

    He'll care yeah, but I think you can do it. As for Leliana, I think you can only get with her if she is your one and only.

    So could I save the game before sleeping with Zevran, get the achievement, and then reload and continue with Alistair?

    Yes he will care and Leliana will care if you are seeing anyone else while seeing her. However, it is possible to sleep with her and have her love you and be in a romance with Zevran at the same time. Once you do this if you put both of them in your party and talk with the duelist trainer (Isabela) at The Pearl you will then have a foursome provided you've hardened Leliana's personality.
     
    Edit: As far as I know this is the hardest thing to do in the game.

    This, although I never did it - Alistair cried like a bitch when he found out about Leliana and then he ran off just cuz I didn't believe in revenge murders! I was upset you couldn't "romance" Oghren I had a hot dwarf chick and didn't want to mess with no other skanky races.
