My Personal favorite Dragon Quest game would probably have to be V, followed by VIII. I really liked being able to recruit monsters (like in Dragon Quest Monsters) and have them fight with me.
Here's some screenshots from each game if you can't remember what they are. I realize that they aren't in the right order (hard to do with images), and IX isn't localized yet, but I figured I'd include it since it is technically out:
