Having an enemy as a platform can really switch things up. First of all, this "platform" may be moving which make life harder. But what really messes things up is that you might kill the enemy when you bounce off him. This means that you must always plan your next move and there is no going back. Usually a fall means death. Said enemy may be moving vertically or horizentally. Some enemies may even hurt you when you bounce on them. Timing is key. 
For example, in Super Mario World. Flying Koopas can be usefull when trying to get bto high areas. But these Koopas lose their wings when you jump on them so you must time your jumps.
