Judging by the sales of the Wii U so far, is it still viable for Platinum to only put out Bayonetta 2 on the Wii U? Will this be another Rayman situation?

Bayonetta 2 and Rayman aren't really comparable as Nintendo is publishing the former. It's probably moreso a question of whether or not Platinum would have the right to eventually release the game on a different platform through another publisher.
I don't think that's likely and even if they could I doubt there are any publishers who'd be particularly interested in the game. Frankly I don't think there would be a Bayonetta 2 without Nintendo.
Unlike Rayman (which I never expected to stay exclusive honestly) I think Nintendo has a tight lock on this one. Actually I'm pretty sure Nintendo is funding the development of the game so it's very unlikely that it will be released on competing platforms.

Like everyone else said Nintendo put money in. It will stay exclusive. On a side note it's always funny to see the comments about people bitching about it's exclusivity not knowing that if Nintendo didn't help fund Bayonetta 2 it wouldn't even exist.
I'm excited to see how they incorporate elements of the Wii U since it's being developed only for that system. Going multiplatform would probably throw that all out the window.

Since Nintendo is publishing it, it will probably remain an exclusive, but lets not forget that Microsoft published Mass Effect 1 and it's now available on the PS3. Anything can happen with time.
I think people who think Bayonetta 2 is going to sell systems are grossly overestimating how many people like Bayonetta.
And for the record, I love Bayonetta.
Yeah. Bayonetta is of system seller quality but not at that level of popularity.
I could see it coming out in a years or so for other systems. Depends how much Nintendo put in to it and how many copies it sells. Could well be a clause in the contract saying if it sells over a certain number and nintendo gets a return on investment the rights revert to the developer. But I also think it will sell for shit.

Yeah, Nintendo's footing the bill so don't expect to see it on your 360 or ps3 anytime soon. I don't think this is a bad think though. If titles like this, Lego City Undercover, and other releases down the line show that there are quality exclusives on the Wii U, then that will increase its appeal and the number of people likely to purchase the system. The more options available to the consumer in the console market, the more console makers will have to strive to develop and support quality products. Thus, the consumer wins.

Seriously. Nintendo is the company funding Bayonetta 2's development. They have full say over what platforms that the game can and will appear on. It's why Kamiya tells people to ask Nintendo any time someone on Twitter asks him if the game will ever be released on something other than Wii U. The chances of Bayonetta 2 appearing on PS3, PS4, Xbox 360, or whatever the hell Microsoft's next console is called are zero. End of story.
Bayonetta wasn't in Sega All-Star Racing: Transformed, so I guess Sega doesn't consider her much of Sega All-Star. Sega probably just doesn't have the money to foot the bill this time, for publishing and distribution. Nintendo is striving to bring titles, and they might now have customers they converted from the PS3 people. ~ From I remember, Platinum said that their Nintendo contract details that they can release it on other consoles, if and only if they have Nintendo's say so. Sega still seems to have some stake in this, I think, since they "Let," Nintendo publish it.
I still don't care for this title. I'll just watch my friend play it. I bet its like part 1. ~ Cool. I think this'll get on PS3, get your hopes up. I can feel it.

They wouldn't let them mess with the fiction that much but it would be awesome if there were a ton of completely out of place cameos.

Unless Nintendo gives the OK then no. There could be deals done like how Mass Effect 1 got into PSN.
Same reason why The Twin Snakes and Fatal Frame 4 remained a Nintendo exclusive.

I mean it would be a mess to try to get it anywhere that is not the WiiU because Ninty is publishing the thing. I am going to go ahead and say it will stay exclusive.

Like I said, it depends on the contract. If it states something like "after x amount of years publishing rights go back to Platinum," it could theoretically happen.
Don't get me wrong, I'm not holding my breath or anything, I'm just saying that it's not impossible (just very, very unlikely).

I'm sure that after a year so of they will find a way to purchase the publishing rights back and go multi-platform. Judging by the size of the Wii U install base it's not gonna sell significantly (double so when this is a niche game), so the potential number of people buying this game is even smaller. And I seriously doubt a lot of people are waiting to buy a Wii U just for this game.

No, that's not how this works. Platinum is not a publisher. Another publisher would need to both be willing to buy the publishing rights from Nintendo as well as foot the bill for developing other console versions. Platinum is not going to do that themselves.
