Sandwich Shop that Dips

This was a somewhat recent Bombcast (maybe spring?) but the guys talked about a sandwich shop where the employee dipped your finished sandwich into a vat of liquid once or twice depending on your preference. What shop was this?

This one is in LA, but I know there is also a place in New York called Brennan & Carr that does it. It's called French dip.

I am hopefully going here in a few weeks when I travel to the US.

It's the Italian beef sandwich that they're going on about

This must be a US thing because I live in the UK and I have never seen or heard of a sandwich shop which does this. And I eat a lot of sandwiches.

It was Portillo's. You could occasionally see one of their paper hats in the background of I Love Mondays.
