Is it okay to make only a couple changes to a wiki in the side sections (concepts, game info, related games) and have that as the only update you make? I've made a few minimal changes here and there lately, and was wondering if this is proper wiki updating etiquette?

Yup. As long as you're adding or correcting info it's fine. Of course, if you're still going through moderation and plan on making a lot of changes to one page, it's best to submit them all at once instead of in small chunks, to make things easier for the moderators. But there's no problem with just updating the info in the side columns.
