What, from a modern perspective, are you most sick of seeing parodied?
My list-
Star Wars
The Lord of the Rings
The Matrix
Don't get me wrong. There do exist decent parodies of all of these. Spaceballs is a good example. But there's no reason to keep on referencing the same shit everyone else does. I'm looking at you Family 'lazy reference comedy' Guy.
I mean small references in films. Not feature length parodies. I think we all hate those (apart from Spaceballs). I'm talking about sticking bullet time jokes in Scary Movie and god knows how many "- I AM your father!" lines. Even Toy Story 2 is guilty.

Parody movies are just a way for studios to make money off of other successful film franchises without putting any effort into an actual screenplay, or unique characters.
I liked old parody movies from the 80s, and really got into the first two or three Scary Movies. But after that, shit's just been ridiculous.

I'm sick of all of them as a whole. Back in the day, there were a few very good ones that succeeded because they were more than just a parody movie. Airplane, The Naked Gun, Top Secret, and Hot Shots took a genre and used it only as a loose foundation for oddball jokes and absurdest humor. But these days, they don't even try to find some originality. These "scripts" are so bad they wouldn't even work as SNL skits. Date Movie, Epic Movie, Disaster Movie, Superhero Movie, and the worse one of all Meet the Spartans are just rubbish of the poorest degree. And, it's not just the hacks Friedberg and Seltzer who brought up that crap that are responsible. Mel Brooks, in the past one of the funniest film makers around, is equally guilty of assaulting the movie-going public with crap like Robin Hood: Men in Tights and Dracula: Dead and Loving It. Sadly, one of the people who made the genre so popular, Leslie Nielsen is also responsible for beating this dead horse with lifeless films like Repossessed, Spy Hard and Wrongfully Accused. He's pretty old now so he seems to have mostly retired, so there is some relief in that. This genre needs to be put to rest. Take that money used to make these eyesores and feed the hungry instead.

I'm sick of parodies in general. Unless someone can enlighten me on any good ones, I believe that parody genre is kind of dead to me.
As long as parodies are like this, I don't mind.
I'm tired of seeing parodies of the thing where a character is about to abuse another character and says something along the lines of "And this is for my mom, this is for my brother, and this is for me!" Heck, I'm tired of seeing that in movies period.
