Yeah, I have a 16GB second gen. It's amazing. Apps I would recommend would probably be...
1. Tap tap Nine inch nails edition (Favorite app thus far)
2. Flick Bowling (awesome bowling game, with some minor defects)
3. Pandora Radio
4. Bejeweled 2 (it's exactly what it is, not overly complicated, just a fun time passer.)
5. iDrum Ministry of sound special edition (Great for Music making enthusiasts)
6. Noise IO Pro
7. Sketch pad
8. Jelly car
9. Vector ball
10. Block Breaker Deluxe 2 (Best blocking breaker game ever made)
Nice. I've got a 32GB one as well - if you're considering a case at some point (and good lord does that shiny back scratch just by glaring at it) the Switcheasy Capsule Neo is probably the nicest one I've seen, and it doesn't add much to the overall size.
Apps...Tap Tap Revenge, Solebon Solitaire (best rendition I've found yet), Defend, Remote, Scribble, Stanza, i.TV, Trace, and the Facebook app have proved useful/fun. I'm not so into the paid stuff...free is okay as I can stomach free garbage. Solebon and Defend are the only two apps I've paid for, and they were only 99 cents each.
I'm waiting for Puzzle Quest, which should be out within the next week or two.
I have been deciding on whether I should get an iPod Touch. I will get a PS3 instead if Sony doesn't cut the price soon.
