Final fantasy 4 on the DS lets you change their classes into whatever you want them to be. That's the only one that comes to mind at the moment.

The Neverwinter Nights 2 add-on Storm of Zehir for PC (the one Matt mentions in the quick look). You need NWN2 to play it though.
