Well I dunno about BG3 but I was disappointed that Fallout 3 by Black Isle never came out. The one under development code named Van Buren. Fallout 2 was like 1998 and I really wanted that third game to come out around 2000. While the Fallout 3 that did eventually come out might be a fine game on its own - it's not the Fallout game a lot of people were waiting for.
I also wanted to play Ghost and if they had released it back then it would have been somewhat novel with the stealth aspect.
@Humanity: I actually agree with you. I'm really not all that angry that Baldur's Gate 3 doesn't exist because it was a story arc that had a very final conclusion. Any game coming after it would have had to be only tangentially related; basically just using the name to further sales. Although someday I want to see a game that emulates the feel of the combat, the excellent writing, and the scope of the story. Dragon Age: Origins has been the only game to come close.
Van Buren still looks awesome even today. The engine and the art style were built to last as well as the Infinity Engine was. I love the Fallout 3 that we got, but I would like to see another traditional Fallout game with some modern gaming conventions to make it more palatable by todays standards.
As for Ghost, I trust Blizzard in canceling the project. There must have been something fundamentally wrong with it to sink so much time into development and have it mostly scrapped. I'd still like to see what it was. Everything about the game still seems interesting, even after we finally have a new Starcraft game (and someday maybe a couple expansions) to sink our teeth into. The idea still has a lot of promise. My guess is that Blizzard will probably develop something like it at least partially in-house one of these days. I don't think they'll be able to trust an outside source with a game from one of their flagship namesakes.
The full version of Cellfactor Revolution. This game looked like it was going to be allot of fun. I would have bought one of those silly Physx cards for it.
I was always curious to see how This is Vegas would turn out.
That was my thought too. Everyone said Saints Row 3 would be a stinker...but it was nearly GOTY around here for Jeff and Ryan. I was interested in This Is Vegas not becuse it was a sure thing but because it was different then another Duty Calls game or a Uncharted Devil May Tomb Raiden game.

@AndrewB: Totally. I'm not some No Mutants Allowed Fallout elitist snob but I'd love to play an isometric, sprite based Fallout game. Sadly that team that stood behind the first two amazing games has long since disbanded and I wouldn't trust anyone else to do the job right. Bethesda made a fine re-imagening so to speak but for me the humor and artstyle just wasn't there. On average I kinda dislike the Bethesda RPG style - vast open world with tons of quests that are all marginally unimportant and boring. Just a person opinion. Still, you can always dream right? Stumble back on Arroyo or Vault City remains. Maybe see how the mutants in Gecko are doing and if that power plant you fixed(sabotaged) is still holding up!

Definitely Star Wars Battlefront 3. With SW Battlefront 2 I even went as far as joining and ultimately running a clan, setting up events and getting really in to it. It was something I had never done before with a game and something I haven't done with a game since.
I would really like to get a chance to play some cancelled version of existing games though.
Resident Evil 4 for example had that hook man version that was cancelled, I also wan to try out Resident Evil 1.5 for some reason.
I was also really looking forward to a game that was mentioned in GameInformer, they covered it really well and I was surprised when I learned it was cancelled. It was a zombie game set on an island-ish location, and it had an emphasis on vehicles and collecting.

That's my pick as well. I was really excited about stealthing it up as Nova and hanging from the ceiling (I think that was in some screenshot) and taking out enemies inside buildings you used to build yourself. I still believe a game like this could turn out great if given proper development attention.
Also, those scary ass looking Resident Evil 4 versions that got canned. Even the one with the ghosts and baby dolls ... I remember seeing that first announcement trailer with Leon walking through that castle hallway ... that was the atmosphere I was hoping for.

On a more serious note, Star Wars: Battlefront 3 - the leaked gameplay that surfaced shortly after it was canceled looked amazing, even more so since one of the guys who worked on it said it was mostly multiplayer stuff.
As for two games I actually don't whether they ever existed or not; I would love to see a No One Lives Forever 3 and a Republic Commando 2.
The real Resident Evil 5. The one that was meant to feature Chris on his lonesome, suffering from mirages because of the heat, pushing forward the mysterious Sherry Birkin plot-device and all other kinds of cool survival-horror malarkey. Also Fear Effect Inferno. Especially since it resulted in the death of the franchise itself. Died too soon /tear.
Adding Ride to Hell to the lists.
Nothing too unique about it, but the premise of having a motorcycle gang and riding down Route 66 sounds awesome to me. Its not officially cancelled, but the last time I heard about it was around the time The Lost and the Damned came out. I feel like that expansion killed Ride to Hell's future.

I'm pretty sure Fortress was not officially cancelled... But I can't blame you for thinking we'll never see it again though.
If it does re-emerge, I bet it'll look quite different from the footage we did see.

Granted- the development/sudden appearance of Elite Squadron made it really obvious that it was what Battlefront 3 had been turned into... But all matters considered, a real Battlefront 3 it was not. :\
