Currently I have my PS3 hooked up to my monitor using a HDMI - DVI cable. My 360 is a launch one however and so it doesn't have HDMI. My computer however has composite inputs. Is it possible to hook my 360 to my tower, and then play it through that to my monitor?

Sure it's possible, provided you have the drivers for your capture device (presumably its your video card, some require additional drivers to get capture working) and a suitable capture tool. Media Player Classic can handle it (go to File->Open Device)
Edit: also, don't forget that composite cables are only capable of SD (640x480), and not great quality SD either. You'll likely see some colour bleeding and blurriness. If you can get a component input that would be much better.
You can probably get a AV to DVI cable.

People do it, theres a reason they advertise 360s in the Dell catalog, but their should be cables that plug in to your monitor and back of your tower, if they didn't come with your system then your gonna have to buy them, its the only way your going to do it. your PC monitor is nothing more then a TV.
You might not actually have to connect it to your Tower itself seeing as it doesnt need it for anything....

Ahh ok, even though my knowledge dies when PCs are mentioned, i'm guessing its pretty hard to do what you desire.
