that Fallout New Vegas and Fable III is released in the same year (or month) because two years ago, Fallout 3 and Fable II is released around that quarter

Do you guys find it weird or ironic too?

I don't think you know what ironic means. It doesn't apply to this at all.

It doesn't really surprise me. Game developers get set schedules. Those schedules are usually from the publishers who want to keep the brand fresh in the public mind. Uncharted 1 and Assassin's Creed came out the same week then 2 years later U2 and AC2 came out the same month. This kind of stuff is more common than you think, but you don't always notice it.

WOAH coincidences...

Christmas came like a month and a half after these games last year too.   WOAH.  Mind..  blown.

Most sequels (that runs on the same engine) usually get a 2 year development time. Happens all the time. I think you're reading too much into it.

But, wasn't Hanukkah at different times?

OP used the word ironic in a sentence that wasn't ironic at all.  That's quite ironic.

Not to pile on, but:

Irony:
"the use of words to convey a meaning that is the opposite of its literal meaning: the irony of her reply, “How nice!” when I said I had to work all weekend." ( Dictionary.com)

2 year dev cycles are the norm for most companies. That's why big publishers (Activision, mainly) will have devs trade-off to get a yearly franchise going. Call of Duty, for instance, since 2 (I think) has gone Infinity Ward, Trayarch, Infinity War and so on. It's just how long things take if you go at a decent pace and want to end up with something decent.

Ironic, it is not.
