By "major" I mean anything that isn't too obscure. The major players in each generation (Sony, Microsoft, Nintendo, Sega etc). Nothing you can go in much depth about, just curious.
I've never once played on an original XBox. Never knew anyone who had one.

The PS3 and Dreamcast. Actually, I played a Ready 2 Rumble demo on it LONG LONG LONG ago, and some NES games much later, but the PS3's got nothing. I'd count Xbox, but since I've seen that being played, I'm a bit reluctant to include it.

Reverse chronologically: Apple Pippin, Neo Geo CD, Amiga CD32... yep that's about it. I'll stop post-crash of '83.
Everything else on WP's list is either crazy, a hardware variation, or not in North America. Good lord I wanted a SuperGrafx. And all seven games. LOL
My home town had super awesome game shops back in the heyday, practically grew up in them.

Never played a Neo Geo ever!!! And when I say never played I mean I never held the controller in my hand. Only played the arcade cabinets of those games that it had (which doesn't count in my book), for all the other systems everything after a NES I some how managed to play if it was at a friends house or a store... I even was able to experience the tragic Virtual Boy at a Toys R Us the year it came out... Even at the young age of 10 I knew that thing was a bomb.... I mean who makes a 1 - 2 color console (black was background) and makes the main color RED!!! It was horrid.

Besides a plethora of the earliest consoles (pre-Atari era)... well, since there are too many to list, I'll start post-SNES/Genesis.
I missed out on the Sega Saturn, but I'm not sure if you can call that a major console, at least in America. I never owned a Playstation, or a PS2, or a PS3, for that matter. That's always been a matter of money issues. My family wasn't exactly the richest during the PS1 and onward era. We were still mostly happy with our Sega Genesis, at that point. I played a lot of the N64 over at a friends house, but never owned one. I never played the Dreamcast, but own one now (and have yet to play it). I also never played any Xbox games until well after the console was dead, and that was only because of backwards compatibility, and because I played a couple of games on the system while trying to fix someone's console for them.
There are also a bunch of handheld systems I've never played; most of them only big in Japan, though.
And that's probably more than you wanted to know.
Let's see... I haven't played any of the Nintendo consoles that came before the N64, I haven't played any Sega consoles with the exception of the Genesis, and I haven't played the original Xbox, or the PlayStation 3.
A lot, I know, but that's what happens when you rarely buy consoles (or games, for that matter) due to being on a rather tight budget.
