There's so many great games. It's tough to know where to start. Here's a bunch of good choices:

I typed out a list, then realized it was just redundant to do so. Lots of good games mentioned so far - check out the indie games area too, most of it is crap but every now and then a good game pops up like Cthulu Saves the Word or Epic Dungeon.

Even the last couple of weeks has seen some really good releases from the demos I've played and Joe Dangers 2 is out tomorrow as well. Below are my impressions based on the demos:
Each XBLA game has a trial version you can download for free. It's basically a demo, and it's a great way to try out a game you're unsure of.

Oh man, had you connected it on monday you could've gotten Geometry Wars 2, Stacking and Limbo for $5, $5 and $7,50 respectively. Now they're back at $10, $15 and $15. I'd say buy a few games you want now and wait for other games to go on sale. Xbox live has some great games, but aside from periodic sales, they rarely drop in price.
Clash of Heroes, Lara Croft and the Guardian of Light, Dead Rising 2: Case Zero, and Outland are all pretty great and I don't think they've been mentioned.
For XBLA indie games: Cthulhu Saves the World, Cursed Loot, Escape Goat, Miner Dig Deep, and Soul Caster 1 and 2. I believe they're all $1 each and they're all damn good.
