I guess Blake Stone, Wolfenstein 3D, Descent, F29 Retaliator, Warzone 2100, Sim Isle and the original Command & Conquer could count, they are games I always keep installed on my machines and boot up to play a level or two in every now and then. Star Trek Online has been getting a similar role over the past few years as well.
For a long while it was Sleepy Dawgs just driving and hitting people with your door was relaxing. Lately it's been Rogue Legacy and Stealth Inc. Looking forward to Cloudberry Kingdom to be one too.
Minecraft, Half Life 2 (almost 100 hours logged into that, so I kinda know how to do things...), Skyrim, Just Cause 2 (explosion simulator), and Command and Conquer 3 (101 hours), depending on what sort of game I want to play and not have to pay super close attention to.
Edit: Mercenaries 2 and Saints Row also work.
Probably Dead Rising 2 Off the Record, not even really sure why, but that game grabbed me in all kinds of ways, might be the sandbox mode. Other than that I've put quite a bit of time into New Vegas after I picked up the dlc from the summer sale, and games that I've played through a long time ago, or I'm playing for the gameplay and less the story even on the first play through I'll throw on a Bombcast.
Super Mario 64, Ocarina of Time, those old AKI N64 wrestling games... Basically a bunch of N64 games. The N64 is my safety console.

You and me, we're simpatico. Coincidentally my safe word is simpatico.
It would probably be whatever the most recent Bethesda game is at the time whether it be fallout or elder scrolls. It just the kind of game that I can play and discover new things with out much effort.
It used to be Mass Effect 1 and 2, but now I find myself playing a lot of Everybody's Golf: World Tour for the PS3.
Animal Crossing New Leaf has been helping me zone out of some stressful situations lately. It's basically just a zen garden of a video game.
Diablo II, any Elder Scrolls game, Dark Souls.
I also find it pretty easy to turn my brain off while playing Counter-Strike. Just run to the encounter points, blast each other to bits, and start over.
A bunch of fighting games. I can head online or into training mode, and to feel nice and comfortable. These days, my bread and butter fighting games are Super Street Fighter IV: Arcade Edition and Melty Blood: Actress Again: Current Code. Sometimes I'll play Tekken or an ArcSys game.
Civilization (at the moment Civ V). It requires thinking but not reflex concentration. It can also chew up time with it seeming like only 5 minutes have gone by.
FIFA 13 (or whatever the current version is).
Spelunky recently though. Thought i was done with that game but have picked it up almost every day for the last 3-4 weeks.

Euro Truck Simulator 2
Not sure if you are kidding or not, but one of my "comfort games" ended up being this. Sometimes I just drive a fucking truck around the country side and its awesome.

I can beat (pass 60 seconds) on levels 1, 2, 4, and 5. I just can't beat 3 (the hardest "regular" difficulty), drives me nuts.
On the podcast they mentioned over the last few weeks they went back to games where they didn't have to think that much or felt more comfortable with (like comfort food). So what games would you call your safe games to go back to when you don't feel like trying something new?
Mine at the moment are Skyrim and Dark Souls (once you got the gameplay down its fun just to listen to podcasts while playing through the game, I'm currently on my 5th playthrough).
If there is already a topic on this I apologise.
I'd say Dark Souls too, funnily enough I'm also on my fifth playthrough (working on an int./dex. build). Skyrim is a game like that for me too, but I prefer going back to Dark Souls. Pokemon occasionally too.
