I'll say NBA Jam because it was my first. It wasn't highly technical, but it was awesome. And i liked catching the ball (and player) on fire.

NBA Jam by far. I could play as Patrick Ewing and John Sparks back when the Knicks weren't an embarrassment. It was a great arcade title.
