Chie Satonaka? Though I guess she doesn't really count for several reasons.

Liu kang cause he throws fire balls and can make a pet dragon appear and its made out out of fire and that's cool

you missed the World Heroes game.

Dragon was their Bruce Lee rip off, could have swore he came in the yellow jumpsuit as an option but cant find any pics.

Marshal Law because his name is awesome and also because he actually has somewhat memorable stories. I can't tell you anything about Fei Long other than he's Bruce Lee. With Law at least we know he's like BFF with Paul and learned some of his moves, also he owns a restaurant.
