There are tons of great games that aren't M.

Here's a quick perusal of metacritic's "Best of 2008" by platform. These are the highest-scoring games across credible reviews:

Wii - SSBB, World of Goo, MaBoShi, Okami, Tetris Party
Xbox 360 - GTA IV, Gears of War 2, Fallout 3, Braid, Rock Band 2
PS3 - GTA IV, LittleBigPlanet, Bioshock, MGS4, Rock Band 2

Here's the Best of 2007:

Wii - Super Mario Galaxy, RE4, Metroid Prime 3, Zack & Wiki, GH3:Legends of Rock
Xbox 360 - Bioshock, The Orange Box (Portal was T), CoD 4, Halo 3, Rock Band
PS3 - CoD 4, Oblivion, Rock Band, Uncharted, Rachet & Clank Future: Tools of Destruction

What you see here is that most good shooters are M, and most good games that aren't shooters are T or E.

" Yes, and your list lacks Gears of War "
I know I forgot that looking back...and that was one of my favorite games from 2008

Games with a M-rated have less limitations as far as content goes.
