Pretty sure eating a zombie would give you the virus and therefore would make you a zombie. Also, Zombies are cannibals, so yes.

Is the zombie still "Alive" while you're eating him, or have you already blown his brains out? I think that while they are "Alive" they count as a different species, but once you rekill them they revert back to a human corpse.

Yes. A zombie is a human that is either possessed or infected by something, in most fiction I've seen anyway. It's still cannibalism if you eat a person with rabies, or a mental disorder - same if you eat a corpse.
