Hmmm I've never thought about plate vs bowl, I usually go plate. I thought it was going to be a wet vs dry thang and I'm allll wet, baby.
Depends on the kind of pasta.
Al-dente. I'm not eating crunch sticks or mush.
It all depends on the sauce and how its made.
For something like spaghetti aglio olio e peperoncino, I like serving that on a plate. I usually put big shrimp in it. Its easy to get off the plate and into your mouth. Lasagna goes on a plate.
For a sauce with ground meat, I like serving that in a pasta bowl, as I find it impossible to get all the sauce goodness into one's mouth from a plate.

Anyway, I like spaghetti and similar pastas Al-dente, but macaroni, ziti, etc...a little softer. Anything with a stuffing should also be a bit soft. Under-cooked pasta is too chewy and pasty. I find that worse than over-cooked pasta.
With the exception of lasagna or something like that, I tend to go with a bowl. I can't imagine eating many varieties of pasta without the side support that a bowl provides.
I like my pasta like I like my men. Given a hot bath and then tossed with butter and sucked either end by cartoon dogs until they kiss. Awwww.
On a plate and prepared by a 90 year, 3 foot tall, old Italian woman with a flat cap and a mustache.

As to the question at hand, does it make a difference? It's not the plate or bowl I'm eating, after all.
