Agreed. Join date is a better representation of that and that's hidden away in the read more about me section. So why do almost all forums more prominently display posts? You have to figure there's a reason.

They don't serve any actual purpose. I like it because the post count grows as I continue to use the site, reminds me of how long I've been around.
The general purpose? I have no clue. I remember names over postcounts, but I guess the higher the postcount, the more likely I'm to read what you have to say. Altho that's not always true, some high post peeps here are downright silly.same, but there has been some cases where someone has joined recently and by the first week they already have 800 posts! This can be your rank on Call Of Duty, your Level on WoW, or your post count on an obscure internet forum. It's an easy way of disqualifying the opinions of people you don't agree with or who are better than you.
I see it as a way to tell how long a person has been a member. Of course, there can be newcomers with over 500 posts in a few months, but if I see someone with thousands of posts, then I know they have been here a while.In some cases getting those numbers may take decades.
for the most part it shows how long a persons been here, and how active on the forums they have been.
I remember when I hit 1,000, I was kind of excited in a hard-to-describe way. That excitement soon turned into a shameful hunger for 2,000. I don't like post counts.
Same reason as achievements and such, some people probably end up spending alot of time on the site just to see that number go up

I think it's just a neat little stat you can see just because, if it wasn't there, people would probably like to know. I don't think there is much rhyme or reason for it.
I get a bit suspicious when I see someone with a ridiculously high post count.
I prefer to think I provide quality over quantity...well most of the time...when I haven't been drinking.

That is of course something that could be a problem sure, but not one likely to be solvable. Then again you could always set a lurk date in your bio!
