The only time I ever saw him give a "subtle" performance was in Gangs of New York, when he's got the American flag draped over him and he's talking to Leo while Leo is in bed. That's an amazing scene.
Brad Pitt and Christian Bale both turn in consistently fantastic roles. Everyone else goes a bit 'meh' at some point.

I find it interesting that people are pulling up Will Smith. I can almost agree with it. The dood does just enough improv in roles to make them his own, and he usually picks roles very well. Either he works as a smartass comic relief (Men in Black, Independence Day, even Hitch) or he is able to pull off a dramatic role with some prestige (Ali, Pursuit of Happyness, I Am Legend).
When he's holding the dog in I Am Legend...man...that was a damn fine job on his part. I'm sure a lot of the reason I was balling like a sissy at that part was because the dog looked a LOT like my own dog...but Smith sold that part and he sold it well.
