I was gutted when they canceled that show.
Fastlane. I will never forgive Fox for cancelling that immensely entertaining show after only one season, especially after leaving off at such a huge cliffhanger. At least it got it's long-overdue DVD release, although all of the original music was changed. Man, I fucking miss that show.
My Name Is Early should've at least gotten one more season to wrap up the story. That show could've had a really great series finale.
And more recently, Terriers. It was a great, original show with really interesting characters. Can't believe it got cancelled so soon. It's a shame people are so fucking stupid and don't actually watch the few good TV shows that are on.
I agree with most of what has already been mentioned here and would like to add: Pushing Daisies....don't think it was mentioned yet.

Only show that I just started watching that is a show I plan on watching that has already ended is Veronica Mars. I heard it didn't end perfectly well, but was a good show.

My So Called Life is another show that should have lasted longer. It was one of the few shows about teenage life that wasn't cheesy and terrible.

The third season was definitely showing signs that the writers were running out of ideas (the over-reliance on guest stars) and I think that there is something to be said for going out leaving people wanting more. The fact that the episodes are endlessly rewatchable also helps. "

I have a few shows...not perfect but deserved a better end
Defying Gravity (TV series) This show had too many corny elements. But they could have written away some of the corny bit and ended up with a great show. The show looked good. I hated their solution to gravity, it was pointless, just spin the damn ship! But I liked the idea that the aliens were TOTALLY unknowable. Thee were not cyphers for understanding humanity, they were not like us -- they were unknowable. I liked that each mission to a planet was HARD. They put the idea that the outside vacuum of space was always there ready to make one mistake your last.
Star Trek: Enterprise (TV series) I know some people HATED this show, but I felt each season it got better. I don't think any Trek has really reached the potential thye could have, but I respect the idea of Trek even if it is sanatized and too safe. What really needs to happen is a totally new series that is about the future but doesn't drag in Gene Roddenberry's silly taboos on genetics, economics, etc into the world view. I'd like an optimistic look at our future that says humans will live for 500 years, will modify their bodies and minds all sorts of ways and will meet aliens they simply cannot and will never understand.
