Lord of the rings is the easy answer. I am legend is pretty good too. I guess when you fuck up the first two movie adaptations, you're bound to get the third one right. Third time is a charm as they say.
As far as I can recall "The Exorcist" made a pretty seamless translation from book to movie.
Some children's books make the transition very well. Mary Poppins, The Black Stallion, The Incredible Journey and Never Cry Wolf are excellent books and movies in my opinion.
