@jeffgoldblum: Go to sequoia national park, it is stunning this time of year (and all times of the year). Go to big trees state park on the coast, there is equisetum (horsetail) 6 feet and taller, it is like being in a prehistoric time. Go to big basin state park. Basically I'm saying you should see some spectacular conifer forests.

As somebody who lives in California, I can confirm this is all anyone ever does here, even in the less well-known areas.
Also, yeah Mexican food, I guess. Though, if your idea of good Mexican food is up north in LA, then I'd hate to imagine what Mexican food is like everywhere else.
I'm going to second In-N-Out Burger as a must. And Disneyland is great if you don't have to stay downtown. Honestly, if you have never been to a Disney amusement park I would find some way to get there. It's an awesome experience. Try to go this week, though, as once kids get out of school the place is going to be mobbed until New Years. Not that it isn't mobbed every day, but you might get on a full three or four rides this week, while you'll spend 3 or 4 hours waiting for a single ride starting next week. Other than that I don't have any suggestions beyond those mentioned. I would also say to eat some traditional Mexican food if you are the type of person who believes a taco involves putting hamburger, cheese, and lettuce inside a giant tortilla chip.

This! I live a couple blocks away from the one in Orange. Always a damn line and I never knew what I was missing. Fuck Roscoes, this place is the real deal. Roscoes uses plastic plates, what the fuck is that about?
Go to LA live and visit downtown. Staples Center. But I would tell people, get some Mexican Food and carl's Jr. Western Bacon Cheeseburger. Also, Santa Monica pier as others have said is good.
Besides general touristy shit. There is some decent food. Try Hollywood Pies or Monte Carlo's Deli & Pinocchio's Restaurant or just yelp around. And just in general try not to waste too much time on "seeing the sights." Go see a movie, do some shopping at a grocery store. Will give you a truer sense of the place.
I know this may come as a shock to many people -- most of all the majority of residents of Los Angeles and the bay area but California is not a 50 mile wide block with Los Angeles on the bottom and San Francisco on the top, separated by a small field.
I have never been to California, so that's my dumb advice, I have heard good things about "Portillo's", a restaurant and bar, depending on where you are in California it may be a good option.
Wear sandals with socks on, a Hawaiian button up shirt, khaki cargo shorts, a fanny pack, and thick/noticeable sun tan screen on your face. Then walk around and take a lot of photos.
