But the best cover song I've ever heard has to be The Gourds' "redneck" version of the Snoop Dogg classic Gin & Juice. If you've never heard it, then you've missed out on a funky, funny interpretation of a rap standard. (the video is incorrectly labeled as Phish)
i really like eric clapton's version of "knocking on heaven's door". and of course you can't go wrong with Jimi Hendrix's version of "all along the watchtower"
and to change it up a bit; i HATE My Chemical Romance's awful rendition of "Desolation Row". It's like they took a beautiful work of art and took a crap on it and re-released it.
Death's cover of Painkiller by Judas Priest. This is one of the few covers I like more than the original, and I fucking love the original and Judas Priest.
Metallica's cover of Am I Evil? is pretty good too.

i dont care much about the hair, what matters is the attitude and the music, and they lost that. believe ME im not the kind of broken-record cunt who keeps whining about metallica changing, i listen to ALL their music and enjoy it and dont like to bitch, but just seeing them in those suits smiling like that makes me sick

Not to sound like a total dick (As I'm apparently wont to do), but if you listen to ALL their music you'd know that the Metallicats pictures are just hokey pics they made for the booklet inside Garage Inc for taking the piss out of themselves for releasing double album with nothing, but covers. Hell, it says so in the pic on the back "Appearing nightly: The Metallicats. Covering all your favorite songs" If you really wanna see a seriously un-metal Metallica pic, check this out.

Sorry for still being on a Metallica trip, but this video with audio of the Dan Band's cover of "Total Eclipse Og The Heart" awesomely coupled with a great edited video from a Metallica concert is pretty sweet.
@TwoOneFive: Great songs ! cheers for posting. Her version is awesome. That's the cool thing about covers...they're done for love of the song and that comes through when you listen to it. Maybe Shatner does it more for love of himself :) but he rocks for that! go ard son!
