Was wondering why they opened their first trailer with a quote from Malory, but now I'm seeing that some of the characters are named Galahad, Percival, Malory, and Igraine...

Are these code names, or should we expect the leader of the Order to be named Arthur, and for the game to be about stopping Mordred's werewolf army? Suddenly high odds on their special water being from the Holy Grail?

Not exactly. OP's supposition that they were code-names is more accurate.
