Recording iPod Touch/iPhone Screen

I have an iPod Touch and I am trying to find a way to record everything that happens on screen.
One of my teachers had an iPod classic and played a movie from it directly for the entire class on a projector screen.

Is it possible with the iPod Touch/iPhone? I just hate the idea of having to use a camera and record me actually touching it. I just want the footage from on screen.

If you have the iPhone SDK, I believe there is an iPhone simulator that runs on your computer (if you have a Mac). Then, you can just use any screen-recording software.
