Which version of Vista should i use to run games using boot camp?

Windows XP.

But if you can't, try Windows Vista Home Premium, since it's the cheapest one that can actually do media stuff.

Windows 7 is not expected to be out until late 2009 at the earliest and seeing as Microsoft never ships OS's on time, don't expect it until 2010.
Just get Home Premium, it's a fine OS.
