For me it was Dragon Quest 8 and Rogue Galaxy.

Disgaea: Hour of Darkness (Although Afternoon on the PSP is a superior version, if for no reason other than sleep mode on your PSP allowing you to cut up an item world.)

Shin Megami Tensei: XXXX (Select your level of difficulty: Easy - Persona 4, Medium - Persona 3 (FES), Slightly more than Medium - Digital Devil Saga 1&2, Kick you between the legs - Nocturne)

Dark Cloud 2 (One's good too and pretty cheap)

Rogue Galaxy (If you like to GRIND...)

I really like Final Fantasy X and the Kingdom Hearts series. You should definately try the latter.

Best Real Time RPG : Kingdom Hearts/Kingdom Hearts 2

FFX, FFX-2, FFXII (They're Final Fantasy games. You pretty much know what you're getting.)
Dark Cloud 2 (Very top notch action RPG.)
Kingdom Hearts (Personally I prefer the original over the sequel. I think they overcomplicated things a bit in the sequel.)
Dragon Quest VIII (Excellent old school RPG. Unlike everything else I've listed, this probably won't appeal to anything less than the most hardcore RPG fans.)

@the_chojin99: X-2 was a little boys masturbatory fantasy....it's too bad to, because the battle system was a lot of fun...I just couldn't handle the lameness
