Well I'd recommend Okage the Shadow King if you like RPG's....and can find it.
If not, then Dark Cloud. Preferably Dark Cloud 2.

and if you are just getting a ps2 now id suggest you check out the 3 main gta games on that console.
the mgs games are also pretty awesome.
guitar hero 1 & 2 if you are into that stuff.

And that's what I can think of now, but there are plenty more. You can't go wrong with any of these.
EDIT: There's also the Xenosaga trilogy. Those are really really good.

There're a lot more than just 3 must-owns for PS2, but if you can only get 3 I'd make them all different genres:
Dragon Quest VIII (screw Final Fantasy; this is the best JRPG of all time; get it at all costs)
God Hand (3D brawler; probably the most challenging game on the PS2)
Jak II or 3 (GTA clone/platformer hybrid)
