Hey, I literally just finished playing Episode 1 of Life is Strange! That is a cool thing that should be on a Best of 2015 list.
As someone who has totally also played some Resident Evil 3 this year, I agree with your assessment. Even if the game throws tons and tons of ammo at you (making it rather easy), nothing quite causes my butt to clench in fear like that Nemesis music and the cry of "STARS"
The game throws an obscene amount of ammo at you, especially bundled with healing items towards the game. I feel like I was well overprepared for just about anything that the game could have possibly thrown at me... with the exception of any situation where I had to properly maneuver around or dodge enemies. That is the true nightmare.
I feel like that was a stark contrast in comparison to how I finished Resident Evil 2, where Claire was limping her way to the end during and after the fight with grotesquely mutated William Birkin. I had barely any ammo and no healing items to get by. I wonder if that's part of why I adored that ending so much more than what RE3 had to offer. RE3 in general seemed way more action movie-ish than 2, now that I think about it.
Also, man. Something about another soul dreading Nemesis' mere existence in 2015 is reassuring about my constantly questionable life choices. I don't know what it is, but I like it.
I also liked the game, although I prefer RE2. You should give try the Remake and Zero games. They are beautiful games, especially Zero.
Likewise, I prefer the heck out of Resident Evil 2. I personally think that it's one of the coolest games ever. I should really make the most of that game and finish the Leon B scenario. Resident Evil 2 was the perfect bus ride companion for me in 2013.
Speaking of REmake, I'm actually making my way through that thing right now with that nifty "HD Remaster" that they tossed out this week. I've always wanted to play that and Zero, but never really had the monies or desire to get a GameCube to make that happen. I hear mixed things about Zero here and there, but there are few things that I would adore more than a game where Rebecca is the star.

If there's two things I love, it's decade plus old video games, and re-releases. I mean, that's not totally true, but it may as well be since that's all I seem to be playing lately. That, and torturing myself with League of Legends. That's not so much a video game as much as it is a torture device.
