Easy or Simple RPGs to play on consoles or PC

I am trying to add games to this list on RPGs which are easy to pick up and drop off. Stat management MUST be easy to very easy to manage.  I have only recently started gaming and as such dont know about most good and easy RPGs (my fav genre) .
