One of my two biggest wishes for open world games is to have the main character open an umbrella when it rains, while in-game and not in a cutscene or whatever. Not just for fighting or floating or whatever, but because it's raining. I guess it's completely pointless and not worth implementing in any game, but I think it would be cool. I'm just gonna list games that come close to fulfilling my wish as I find them.
(The other wish is to have them cover bright sunlight with their hands, but I haven't seen that in a game yet.)

Just linking the list to the object page. Umbrellas are cool but rarely used for their intended purpose in video games =( I like to think of them as "handheld roofs" rather than a sword or hang glider substitute, although that's cool too.
You can pick up or steal umbrellas when it rains, but it closes up as Wei picks it up. I figured out that when you buy a pork bun while holding it, the umbrella will open. Or was it that I took a taxi ride? I haven't fully tested it and I can't recall anymore. It acts the same way a closed umbrella does (you can still use it as a weapon), but it points upwards as Wei holds it. It looks as if he's actually using it! "Animal Crossing lets you pull out an umbrella whenever. Also you can spin the umbrella get the water off!" Thanks to MeatsofEvil for the cool tip. Spinning the umbrella sounds fun... It seems like you can use umbrellas to prevent tanning in some games too. Super neat! It would be even better if they include transparent umbrellas that don't prevent tanning. Update: I played New Leaf. Haven't got a rain yet, but I bought an umbrella and confirmed this. One extra point for the option to design your own umbrellas!
You can get an umbrella and equip it to not get wet in the rain. There might be more umbrellas in the franchise, I might look into it later.

Act II has a scene in which Conway can open an umbrella. I somehow forgot about this part until replaying it recently.
They patched in umbrellas in 5.21. Purely for fashion, but they do block rainfall.
