I had this happen, too, towards the end.  I purposefully hid behind a big daddy as a big sister was shooting at me and he got pissed and took her out.
 
EDIT: ha, and in the exact same part that Shadow's video shows above.

I guess that all depends, really.  I've heard a lot of people say the hug you share with your sister (?) in Mirror's Edge was very awkward, so maybe they were trying to avoid something like that.  I felt as though the fact that she was fighting by your side at the end, yelling and screaming about how no one better mess with her father, was a good enough emotional and dramatic event for me.
 
I don't necessarily disagree with you, though, but games are kinda limited to what they can do to evoke emotions without making people feel all weird.

To add to what others have said regarding your 3rd question, the Claymores that you've put down last until:
a.) you die, then finish watching the kill cam --> so in this case, if you think someone's near your claymore when you die, wait until the kill cam has reached its end before respawning
b.) you die, then respawn (in Hardcore Team Deathmatch) --> while you're waiting to respawn, the claymore is still active
 
I'm not sure of their behavior in game types where you die and are dead for the rest of the round.  I believe they may stick around, but I'm not sure.  Claymores are a great piece of equipment to use when you're trying to control access to a small or medium sized area.  At the least, they serve as a sort of security device to announce the presence of enemies, even if they have Scrampler Pro (just listen for the *click*).  At best, they kill dudes.
