I thinking about the exact same thing. The iPhone/iPod Touch should definitely be able to handle multiplayer games, where you play over wifi.

Mac OS X is in my opinion a far better OS than Windows. It is more stable and much faster than Windows. Sure you can't play every game on a mac, but just get a copy of Windows XP and put it up on your Intel Mac ;)
