It comes from how the coffee is poured. Normally the three main types of coffee which baristas make are Flat Whites, Lattes and Cappuccinos, with variations for skim milk (Skinny Latte, Skinny Flat White) or Soy Milk (Soy Latte, Soy Cappuccino) amongst other things. The difference between these three are the levels of foam (or frothed milk) which is added into each. A Flat White should have very little, Latte has about 2-3 centimeters and cappuccino is about a third of the cup (and covered with chocolate powder). Of course, there are many other variations such as a Mocha (chocolate added into the coffee), short black (straight espresso shot), long black (espresso shot with water to dilute it) or affogato (espresso shot poured over a ball of ice cream) but these are less common. 
 
So when people order Soy Lattes they want a soy milk coffee with 2-3 cm of foamed soy milk to cover the top. Typically. They're still idiots.
