3D Acceleration support for regular Grim Fandango is iffy at best, you might have to run it in software mode.
If you absolutely must have 3D Acceleration though, you could try ResidualVM http://www.residualvm.org/
Just be prepared for potential crashes & glitches.
Indeed a truly brilliant game that makes me all the more hopeful for the upcoming Double Fine Adventure.
I was recently inspired to run through it once more and record it all http://www.youtube.com/playlist?list=PL98DCC5B81BC3B82D
You definitely need the patch which you can get here > http://www.lucasarts.com/support/update/grim.html
Other than that there are two things you can try, first is a custom setup & launcher program which you can learn more about & download from here > http://quick.mixnmojo.com/software/grim-fandango-setup
Or if that's no good, some of guys behind ScummVM are working on a similar program for Grim called 'ResidualVM' It's still very much in development and prone to glitches & crashes but the game is completeable with this program and can be downloaded from the following link > http://www.residualvm.org/
I was able to finish the game with ResidualVM as this proves > http://www.youtube.com/playlist?list=PL98DCC5B81BC3B82D
No luck with the custom launcher though, no sound and would often freeze up. Your mileage may vary.
Loved this game back in the day, enough that I was compelled to run through it once more and show it off to my friends who had never played it.
