Here's what needs to be made into a Natal game:
A standard beat 'em up. But polished to hell. I'm saying they put an updated version of euphoria into the game. Also borrow elements from Fight Night Round 4's physics based impacts and blocks. If I punch towards a dude's stomach and he blocks it, I want the punch to land where it should and for the enemy's body to react to the block accordingly. After I come in with a huge hook to the side of his face, I want him to jerk to the side realistically and crumple to the ground. I feel as though the technology is so nearly available or certainly available already.
From a gameplay perspective, the game would need to be somewhat rhythm based. It would be natural reaction for a person to just flail around in front of the screen like a dude playing Wii Boxing while having a grand mal seizure. To prevent that, the game would need to restrict how fast the limbs on the screen could move, so you'd have to fall into rhythm with the character on screen to be successful. Over the course of the game, you could perhaps "level up" your movement speed so that the game tracks your movements and mimicks them even faster. Of course, as you become faster the enemies would have to as well.
Just food for thought. Natal needs a legit experience that will make me jealous of those who have it.
