    So if I try to do the one where you cannot die while completing the story mode, can i save before each mission and i i die can i just reset my xbox and try again?

    Yes, that should work just fine.  Checking your stats should confirm this to you.  All it does is check to see if your deaths stat is zero at the end of the game for the achievement.

    Hard save regularly.  If you die, then you can quit to the main menu and reload your save.  This works the same way that Brass Balls worked on Bioshock.
