    If I bought the steak and cooked it myself, I prefer medium-well. If I am at a restaurant, I get medium. Restaurants completely screw you over if you order a steak medium-well or well.

    It depends on the quality of the steak and the competence of the cook manning the grill, but generally medium-rare. I like rare too.

    Medium-rare/rare. Depends on the restaurant. A lot of restaurants will cook them more than you want to cause of health reasons or something so if I know it's that kind of establishment I'll ask for a rare and it'll come out medium-rare.

    You missed one, blue (bleu). I went from Medium when I was a kid, to Medium-Rare when I was in high school, to Rare when I was out High School, and now I've been dabbling in blue. I also like Raw, but not any raw, it has to be extremely good quality meat. I've actually had kangaroo tar tar which was amazing. Anything more than Medium-rare lacks flavor.

    Medium rare is the only way to get a steak if you are aiming for it to be as tender as possible; rare meat hasn't reached the point where the internal marbling will render, so it will actually wind up tougher than one cooked to medium rare. Medium and above just dries the meat out further.

    As I only cook meat by sous vide anymore, I've gotten super crazy with temperatures. 127 F is my current go-to. Toss it in the water bath, wait 90 minutes, pull it out, grab the torch, sear it, and you're good to go. It cannot be beat.

    That's not true at all. Medium Rare supposedly has more flavor because the fat melts, however, it's not as tender as rare meat. Sous vide you can cook Medium Rare or Rare and it's just as tender because the connective tissues break down since it's cooked longer, even at low temperatures.

    I think a good medium rare is best. However I'd take a steak that's too done over a steak that's not done enough, and I've had some pretty undercooked ones ordering medium rare before. So depending on how much I trust the restaurant, sometimes I'll order medium.

    When I cook it, it's always medium or medium well. I'm not a very good griller yet.

    @horseman6: Ah, my mistake. Well, the end result is relatively the same; honestly, I think a better question would be "what method do you cook your steak" as you point out, sous vide just turns everything to butter.

    Burn mine in the pits of hell. I like my steak well done, burgers medium rare, chicken dry and just this side of overcooked, my water extra watery, my shoes snug, my armpits well deodorized, and my beard manly.

    The last time I ordered a steak I decided to ask for it to cooked medium, was given a steak that might as well have been medium rare, and was reminded that I should always continue to ask for it to be cooked medium well because half the time it's still pretty pink in the middle anyways.

    @drewbert All you need is a cheap and heavy iron skillet, salt and pepper, and butter. Oh, and a good Cab, of course.

    Anyway, I'm such a die-hard steak fanatic that I take pictures of every steak I cook and then catalog the pics into folders. I don't even save pictures of most of my previous girlfriends. Come at me with your well done, heathens. I even blog about steak. Oh and here's an opportunity to bump last year's steak poll.

    When I cook it myself, Medium-Well (I don't trust me). At a lesser restaurant, Medium. At a reputable restaurant, always Rare.

    Everyone gives me dirty looks when I order a rare steak and a finger of whisky during a weekday evening, but it's just like putting lemon on fish.

    basically it all falls down on how to Cut it with a knife. If it's smooth and easy then that's how I love my stake. I never liked the feeling I'm fighting rubber when cutting a well cooked stake, want it to feel like butter.

    Depends on who's cooking it, where it's being cooked, and the quality of the cut. But when it's a great cut, a great cook, and a clean place a rare steak is fucking incredible.

    Medium Well with light spices, I like steak because it tastes like steak. I'll practically eat anything except raw and well done can be over done.

    Yeah, I was going to say this. Eating something raw/ hardly cooked is the very definition of savage.

    I really don't get the chest beating when it comes to steak, it's like people have some weird arrogance over how they eat their steak they have to tell people about it? Cool I guess. I'll just be over here enjoying eating my meat while you guys have a pissing contest about it.
