Tekken 3. Actually, I kind of lost interest after 3. That was one of the greatest fighting games ever, there's no way the others could match it. The only bummer is my Tekken career ended shortly before it's hottest babe, Christy, arrived.
Tekken Tag Tournament as well... Not so much because of the tag stuff really, I just still find it more fluid and fun than Tekken 5. Tekken 3 is a favourite too though. Played the heck out of both games, since Tekken is my favourite fighting game franchise.
Tekken 2 is my nostalgic favorite, but in all honesty, I think Tekken 5 was just as solid a fighter and definitely a hell of a lot shinier. Tekken 2 was the reason I wanted a PS1 back in the day.
Tekken hasn't really evolved since 3, other than the tag experiment and extra characters in 5 and the failure that was 4. So, 3 is the magic number. I like DR on PSP as it has the return of characters I enjoyed, but overall, I'm over Tekken nowadays, yet had spent countless hours on 3.

Same here but I probably played more of Tekken 2 then any other Tekken cause it was the first PSX game I had so by the time I got Tomb Raider and some others I was pretty Tekken'd out.
