I say this s video componet cable on bestbuy.com today.

    S video cable for wii
    S video cable for wii

I see that it also has a yellow video input plug. In new to s video plugs. Will I need to plug that yellow one in as well to get video? Or will I just need to use the s video part.

Because the whole reason im getting this is so I can play my three systems without unplugging anything. I know it sounds lazy. But its very convienent

You should only need to plug in the S video plug.

S-Video usually shares the same audio ports as composite so that's not really going to help you much. Also some TVs have it so S-Video overwrites the composite video input so you probably will have to unplug your S-Video cable to watch any video composite video input.
Don't buy it, the best case scenario you'll have to constantly hook the audio cables up. Just get an AV selector.

O really well it seems like on the TV im looking at that there is a specific red and white audio section for it.

If you look closly the s video is in the middle, left of the hdmi. It looks to have a seperate set. Will that still take over the composite? Because on the tv in my baseball I have somthing hooked up to the s video, and it doesnt overwrite it.

S video only has a better sharpness to it over composite otherwise there is no difference.
Most tvs have a dedicated slot for svideo including its own red and white audio including an idividual inpurt source on your tv that you access via your remote.

P.S: that tv your looking at has component hook ups thus you might look into geting the component cables for the Wii so you can get 480p and much better widescreen support.
