So I finally got my hands on a decent sized memory stick; I'm still on the old 20GB model 360, so I have yet to give this feature a go. What games really show a difference with the data installation option?

What games are vastly improved from installation?
Not a bad question. I vaguely remember talk about Lost Odyssey getting improved load times, but I could never verify that. Now that I'm on my 3rd Xbox, I finally sucked it up and bought one of those stupid expensive harddrives. I literally install everything, and when I'm finished with said game, I delete it.

Armored Core: For Answer is probably one of the most dramatic improvements I've seen. Load times cut to 1/4th the original, and it doesn't spin the disc like a madman every time you open your schematics page. Before installation, hearing the game wind up like that honestly made me scared the entire X-Box was going to go up in flames.

"Vastly improved load times and the battle transition became almost instantaneous.
Also, Fable 2's awfully sluggish menus were much improved with a hard install and so were GTA4's boot up times (by around 20 seconds which is considerable).
Generally, almost everything benefits apart from the odd exception (games ala Halo 3).
Castlevania: Lords of Shadow reduced alot of hitching and screen tearing when you installed the discs. (more important for the latter half of the game from what I've been told)
GTA4, Halo Reach, Orange Box, all noticeably load faster.
Other times you notice faster loads is when playing online, those with the installs will have their game load quicker and you have to wait for others that don't.
The games that benefit the most from it, are the WWE games. If you have seen the quicklooks, you notice how bad the loading can be. With the install, loading pretty much disappears. So it is a pretty dramatic difference.
