The way I see it, lots of splicers wear those ears, they could be called their symbol, so to speak(bear with me). So, you have a symbol of the splicers. Cohen wants to 'take them off'. Could'nt that mean that in his own twisted way, he wanted to heal them? Maybe petrifying and posing them was his idea of healing them.

He's crazy, really crazy. Batshit crazy. A pyschopath, a looney, a schiz, a demented individual. I have no idea what he is ranting about! :O

I think he's a gay guy who loved Andrew Ryan, and wanted to engage in some ear secks. Ryan wasn't cool with it, so he has now built up a resentment for ears. They remind him of the thing he wants most and cannot have

It was the rabbit masks they were all wearing.  They're all too ashamed of their disfigured faces to take them off.

that guy is so amazingly awesomely strange and creepy. yet meaningful

I don't get Cohen at all, but that's part of his character. He's an enigmatic, messed up character who fits perfectly into the world of Rapture, twisted and messed up.
So yeah, I dunno about his ears.

I believe Cohen rant about taking the ears off was about his inability to create music anymore so he used Bunny Ears as a Metaphor for Musicians Block

I think he was completely out of his mind, and happened to record that during a brief period where he thought he was a rabbit.

Man, Sander Cohen was awesome. I really liked that guy. Too bad I never got to check out his house. I really regret missing that opportunity. So much that it's actually the main reason I'd like to replay the game.
